Ingredients

Main Ingredients
  • 2 Chicken Breasts
  • 1 Green Bell Pepper
  • 1 Green Onion (green and white part)
  • 1/2 cup or more Corn Starch or Arrowroot Powder
  • 2 tbsp Avocado Oil
  • Optional: coconut rice and sesame seeds
Marinade
  • 1 egg
  • 1 tsp Sesame Oil
  • 1 tbsp Soy Sauce or Liquid Aminos
  • 1/2 tbsp Maple Syrup
Sauce
  • 1 tbsp Soy Sauce or Liquid Aminos
  • 1-2 tbsp Ketchup
  • 1/2 tbsp Sesame Oil
  • 1 tbsp Rice Vinegar
  • 1-2 tbsp Honey
  • 3 cloves Garlic, minced
  • 1 tsp Fresh Ginger
  • 1/4 tsp White Pepper

Instructions

  1. Trim fat off chicken and cut in 1 inch bite size pieces
  2. Cut bell pepper into mini pieces and set aside
  3. Combine chicken and marinade ingredients in a bowl and store in fridge covered for 30 minutes
  4. While chicken is marinated, create sauce by combining all ingredients and whisking until thickened
  5. Strain the chicken from the marinade and coat the pieces in the corn starch/arrowroot powder
  6. Heat up your wok (or saute pan). Once the pan hot, add in the oil. Once the oil is hot enough (you can tell its hot enough if you splash water in the pan and it sizzles) add in the chicken, making sure the pieces are mostly flat in the pan
  7. Let chicken cook for 3-4 minutes and then flip. The pieces should have a nice sear on them
  8. Once almost cooked through, add to your air fryer to crisp up more (if you dont have an air fryer just keep them in your pan until the chicken is cooked through)
  9. Add butter to a medium hot pan and cook the bell pepper pieces until they are tender
  10. Once peppers and chicken are done, combine them together and pour over the sauce and toss until completely coated
  11. Mince the scallions and green onions
  12. Pour the chicken over rice and top with sesame seeds, scallions and green onion
