Chicken Lettuce Wraps
Ingredients
- 1lb Ground Chicken
- 1 tbsp Olive Oil
- 3 Coves Garlic, minced
- 1/2 White Onion, diced
- 1/2 Red Onion, diced
- 1/4 cup Matchstick Carrots, diced
- 1/2 Red Bell Pepper, diced
- 2 tbsp Hoisin Sauce
- 1 tbsp Rice Wine Vinegar
- 1 tbsp White Miso Paste
- 2 tbsp Liquid Aminos
- 1 tbsp Ginger (I buy the frozen from TJs)
- 1 can Water Chestnuts, drained rinsed and finely chopped
- 1/3 cup Red Cabbage, diced
- 4 Green Onion, diced
- salt and pepper to taste
- 1 Head Iceberg Lettuce or Butter Lettuce
Instructions
- Heat oil on medium high heat and add in ground chicken until browned, making sure its crumbled
- Stir in garlic, onions, ginger, bell pepper and carrots
- Add in hoisin, rice wine vinegar, miso paste, liquid aminos. Cook/simmer until veggies are tender
- Add in red cabbage and water chestnuts, stir. Continue to simmer to let flavors meld together
- Stir in green onions, salt and pepper, to taste
- Spoon mixture into lettuce cups and enjoy!
