Chicken Lettuce Wraps

Ingredients

  • 1lb Ground Chicken
  • 1 tbsp Olive Oil
  • 3 Coves Garlic, minced
  • 1/2 White Onion, diced
  • 1/2 Red Onion, diced
  • 1/4 cup Matchstick Carrots, diced
  • 1/2 Red Bell Pepper, diced
  • 2 tbsp Hoisin Sauce
  • 1 tbsp Rice Wine Vinegar
  • 1 tbsp White Miso Paste
  • 2 tbsp Liquid Aminos
  • 1 tbsp Ginger (I buy the frozen from TJs)
  • 1 can Water Chestnuts, drained rinsed and finely chopped
  • 1/3 cup Red Cabbage, diced
  • 4 Green Onion, diced
  • salt and pepper to taste
  • 1 Head Iceberg Lettuce or Butter Lettuce

Instructions

  1. Heat oil on medium high heat and add in ground chicken until browned, making sure its crumbled
  2. Stir in garlic, onions, ginger, bell pepper and carrots
  3. Add in hoisin, rice wine vinegar, miso paste, liquid aminos. Cook/simmer until veggies are tender
  4. Add in red cabbage and water chestnuts, stir. Continue to simmer to let flavors meld together
  5. Stir in green onions, salt and pepper, to taste
  6. Spoon mixture into lettuce cups and enjoy!
