Chicken Masala with Buttered Basmati Rice
Chicken Masala with Rice
to make this dish, I use a simmer sauce from Trader Joes
Ingredients
Marinade
- 1 cup Plain Whole Milk Greek Yogurt
- 2 Garlic Cloves, minced
- 1 cup Masala Simmer Sauce (I get from Trader Joes)
- 1/4 tsp Salt and Pepper
Other Ingredients
- 1 pound Chicken Breasts
- 1 tbsp Olive Oil
- 1 cup Basmati Rice (uncooked)
- 2 cups Chicken Broth/Coconut Milk or Water
- 1/4 tsp salt
- 2 tbsp Butter
Instructions
- Cook rice - add 1 cup of rice, 1/4 tsp salt, and 2 cups of chicken broth (or water) to a pan, once the water comes to a boil, cover and simmer for 10-15 minutes. Remove from heat, don’t open, and let sit until about to serve
- Combine all marinade ingredients together, pour into a plastic bag or dish and submerge the chicken (let marinate for minimum of 30 minutes)
- Heat oil in a hot pan, reduce heat to medium and add the chicken, cook through
- Add a little of the extra marinade to the top of the chicken
- Add 1 tbsp butter to the rice and fluff with a fork
- Serve rice and chicken together and serve immediately
