Blueberry Crumble Muffin Tops
Ingredients
Muffins
- 2 cups All Purpose Flour, sifted
- 2 cups Blueberries, fresh or frozen
- 2 tsp Baking Powder
- 1 cup sugar
- 1/2 tsp salt
- 1/2 cup Butter
- 1/2 cup milk of choice
- 2 Eggs
- 1/2 tsp vanilla extract
Crumble Topping
- 1/4 cup All Purpose Flour
- 2 tbsp Sugar
- 1/4 tsp Cinnamon
- 2 tbsp Butter, melted
Instructions
- Preheat oven on Bake 350 degrees
- Mix butter and sugar together in large bowl until creamy
- Add in eggs and blend
- Add in salt, vanilla and baking powder and mix lightly
- Slowly add in sifted flour 1/2 cup at a time until all is fully combined
- Add milk and mix completely
- Mash 1 cup of blueberries with a fork and fold them into the batter
- Pour batter into greased muffin pan [For Muffin Tops— fill the cup almost to the top]
- Add a few blueberries to the top of each muffin
- Bake for 20-25 minutes or until golden brown around the edges
