Air Fried Potato Skins
Ingredients
- 4 Russet Potatoes
- 1 tbsp Olive Oil
- 4 Slices Bacon, chopped
- 1/2 cup Shredded Cheese
- 2 Green Onions, minced
- Salt and Pepper, to taste
Instructions
- Cook bacon according to directions, once cooled crumble and set aside
- Wash and Pierce potaotes with fork several times. Cook each potato in the microwave for 5 minutes, separately or all together for 20-25 minutes
- Cut the potatoes in half, horizontally
- Scoop out the potato, leaving 1-2 inches of potato. Save the inside of the potato for something else (maybe mashed potatoes)
- Brush the inside and outside of the potatoes with olive oil and sprinkle with sea salt
- Air fry the potatoes until slightly crispy (5-10 minutes)
- Remove from the air fryer, fill with cheese and broil until cheese is melty
- Top with bacon crumbles and minced green onions
