Ingredients
Loaded Sweet Potato Skins
- 4 medium Sweet Potatoes
- 1/2 cup Black Beans, drained and rinsed
- 1 tbsp Corn
- 1 tbsp Salsa
- 1/8 tsp Sea Salt
- 1 tsp Cumin
- 3/4 cup Shredded Cheese
- 3 tbsp cup Sour Cream
- 1 tsp Paprika
- Olive Oil
- Optional: bacon, chives
Instructions
- Preheat oven to 400 bake
- Wash and dry potatoes and pierce each one with a fork several times and bake for 40-50 minutes, or until soft (leave oven on for later use)
- Allow potatoes to slightly cool then cut halfway, lengthwise and then lengthwise again, making 4 skins per potato
- Scoop out the flesh from each skin (leaving a thin layer at the bottom of each) and add to a bowl
- Spray or drizzle a little olive oil onto the skins and bake for 10 minutes or until crispy
- While skins are in the oven, add black beans, corn, salsa and spices to the mashed potato mixture and mash/mix until fully combined
- Remove empty skins from oven and evenly scoop the mash mixture into each, top with cheese and broil on low until cheese melts, about 3 minutes (make sure to watch so it doesn't burn!)
- Mix sour cream and paprika together and add a dash of water to thin out for drizzle purposes
- Remove from oven, drizzle sour cream and any other toppings preferred, enjoy immediately!
