Healthy Vegan Mac & Cheese
Ingredients
- 1/2 bag pasta of choice, about 8 oz
- 1 tbsp oil (I used avocado oil)
- 1 Medium Onion, minced
- 4 Cloves Garlic, minced
- 2 tbsp Butter (or vegan butter)
- 1/2 cup Raw Unsalted Cashews, soaked for minimum 2 hours
- 1/2-3/4 cup Milk (or non-dairy milk)
- 3 tbsp Nutritional Yeast
Instructions
- Cook pasta according to directions and set aside
- Heat a sauté pan on high heat, add oil and reduce heat to medium
- Add in chopped onion and cashews
- As onion starts to get translucent, add in minced garlic and and stir
- As garlic becomes fragrant, add in cold butter, let melt and stir together
- Transfer mixture to food processor to high speed blender, add in (1/2 cup) milk and nutritional yeast and blend
- Add more milk if needed
- Toss pasta back in pan and pour “cheese” sauce over pasta. Stir gently to coat completely.
- Add salt and pepper, toss and serve!
