No Bake Pumpkin Cheesecake Balls
Ingredients
- 6oz Cream Cheese (Full Fat)
- 1/2 can Pumpkin
- 1 tsp Pumpkin Pie Spice
- 1/2 tsp Cinnamon
- 3 tbsp Coconut Flour
- 2 tbsp Maple Syrup
- 3 Graham Crackers (2 for the balls, 1 for topping)
Instructions
- Beat cream cheese and pumpkin with an electric mixer until smooth
- Add in both spices and syrup and mix well
- Add in flour slowly, 1 tbsp at a time, mixing on low/medium
- Once everything is combined, fold in crushed graham crackers
- Use an ice cream scoop, spoon or your hands to roll into balls (top with extra crumbled graham cracker if desired)
- Let set in the freezer for 2 hours
- Move to the fridge and eat within 2-3 days (or store in the freezer for up to 2 weeks)
