Vanilla Almond Zucchini Muffin
Ingredients
- 2 cups Grated Zucchini
- 1/4 cup Butter (melted and cooled)
- 1/2 cup Maple Syrup or Honey
- 1/4 cup Milk of choice
- 2 tsp Vanilla Extract
- 1 tsp Baking Soda
- 1 tsp Baking Power
- 2 cups All Purpose Flour
- 2 Eggs
- 1 tsp Cinnamon
- 1/2 cup Granola
- Manuka Honey for topping (optional)
Instructions
- Preheat oven to 350 Bake and grease muffin tin
- Mix together the syrup, butter, eggs and milk
- Add the baking soda, baking powder, and vanilla and mix well
- Slowly add in the flour a little at a time until fully incorporated
- Add cinnamon and salt, stir
- Slowly fold in grated zucchini and granola
- Fill the greased muffins tins a little higher than 2/3 full
- Top with more granola
- Bake for 18-20 minutes or until a fork can come out clean
