Vanilla Almond Zucchini Muffin

Ingredients

  • 2 cups Grated Zucchini
  • 1/4 cup Butter (melted and cooled)
  • 1/2 cup Maple Syrup or Honey
  • 1/4 cup Milk of choice
  • 2 tsp Vanilla Extract
  • 1 tsp Baking Soda
  • 1 tsp Baking Power
  • 2 cups All Purpose Flour 
  • 2 Eggs
  • 1 tsp Cinnamon
  • 1/2 cup Granola
  • Manuka Honey for topping (optional)

Instructions

  1. Preheat oven to 350 Bake and grease muffin tin 
  2. Mix together the syrup, butter, eggs and milk
  3. Add the baking soda, baking powder, and vanilla and mix well
  4. Slowly add in the flour a little at a time until fully incorporated
  5. Add cinnamon and salt, stir
  6. Slowly fold in grated zucchini and granola
  7. Fill the greased muffins tins a little higher than 2/3 full
  8. Top with more granola
  9. Bake for 18-20 minutes or until a fork can come out clean
