Healthy Egg Salad Sandwich
Yield: 2-3 Sandwiches
Ingredients
- 6 hard-boiled eggs (8ish minute boil)
- 3 tbsp Mayo
- 2 tsp Dijon Mustard (or whole grain)
- 1 Celery Stalk, minced
- 1/3 Red Bell Pepper, minced
- 1/2 tbsp Green Onion, minced (white part)
- 1/4-1/2 tbsp Green Onion, minced (green part)
- 1/4 tsp Sea Salt
- 1/8 tsp Ground Black Pepper
Instructions
- Hard-boil 6 eggs (place eggs in a pot and cover completely with water, let the water come to a boil and then set timer for 8 minutes). Remove eggs after 8 minutes and place them in a bowl of cold ice water to stop cooking. Remove the shells and chop eggs into fine/small pieces and place in a mixing bowl
- Add all other ingredients and mix with a spatula until fully combined
- Set in fridge to get cold/set to increase flavors, if desired
- Toast 2 pieces of seedy grain or sourdough bread to your liking
- Top bread with your desired amount of egg salad, cut in half, and enjoy immediately
