Hummus Pasta Salad
Ingredients
- 1/2 container Edamame Hummus
- 1 box Pasta of choice
- 1/2 Cucumber, cubed
- 1/2 medium Red Onion, minced
- 1 medium Red Bell Pepper, cubed
- 2 stalks Celery, cubed
- 2 tbsp Olive Oil
- Crumbled Feta (desired amount)
- Salt and Pepper as desired
- Optional: halved black olives
Instructions
- Cook pasta according to directions and save 1/2-1 cup pasta water for later and drain
- Combine all ingredients (except feta) in a separate bowl
- Add pasta and mix
- Whisk the hummus and pasta water slowly in a separate bowl until combined
- Pour hummus mixture over pasta and veggies, top with feta and then stir until all combined
- Sprinkle with salt and pepper and olive oil and taste test
