Charred Corn Orzo Pasta Salad

Ingredients

  • 8oz Orzo Pasta
  • 1/2 English Cucumber, cubed
  • 1 Tomato, chopped (or 1 cup halved cherry tomatoes)
  • 1/2 cup Feta cheese, crumbled
  • 1 cup Corn (fresh or frozen)
  • 3 cloves Garlic, minced
  • 1 tbsp Grass-fed Butter
Dressing
  • 1/4 cup Olive Oil
  • 3 tbsp White Wine Vinegar
  • 1/2 lemon, squeezed
  • Salt and Pepper

Instructions

  1. Cook orzo according to the directions, with salted water
  2. While pasta is cooking, chop cucumbers and tomatoes and combine in large bowl
  3. Heat oil in a skillet, once hot, add corn and stir. Add in the butter and minced garlic and stir until combined
  4. Keep the skillet on medium-high and let corn char a bit. Once at desired charred level, add everything from skillet to the bowl of veggies and stir then add in the crumbled feta
  5. Whisk the olive oil, vinegar, lemon and salt and pepper
  6. Add orzo to veggies and stir then immediately pour in the dressing while everything is still warm. Stir until everything is incorporated
  7. Taste test for your desired flavor
  8. Cover and let sit for 1-2 hours
