Charred Corn Orzo Pasta Salad
Ingredients
- 8oz Orzo Pasta
- 1/2 English Cucumber, cubed
- 1 Tomato, chopped (or 1 cup halved cherry tomatoes)
- 1/2 cup Feta cheese, crumbled
- 1 cup Corn (fresh or frozen)
- 3 cloves Garlic, minced
- 1 tbsp Grass-fed Butter
Dressing
- 1/4 cup Olive Oil
- 3 tbsp White Wine Vinegar
- 1/2 lemon, squeezed
- Salt and Pepper
Instructions
- Cook orzo according to the directions, with salted water
- While pasta is cooking, chop cucumbers and tomatoes and combine in large bowl
- Heat oil in a skillet, once hot, add corn and stir. Add in the butter and minced garlic and stir until combined
- Keep the skillet on medium-high and let corn char a bit. Once at desired charred level, add everything from skillet to the bowl of veggies and stir then add in the crumbled feta
- Whisk the olive oil, vinegar, lemon and salt and pepper
- Add orzo to veggies and stir then immediately pour in the dressing while everything is still warm. Stir until everything is incorporated
- Taste test for your desired flavor
- Cover and let sit for 1-2 hours
