1 cup Masala Simmer Sauce (I get from Trader Joes)
1/4 tsp Salt and Pepper
Other:
1 cup Basmati Rice (uncooked)
1 pound Chicken Breasts
2 tbsp Butter
1/4 tsp salt
1 tbsp Olive Oil
Directions:
Add 1 cup of rice, 1/4 tsp salt, and 2 cups of Chicken Broth (or water) to a pan, once the water comes to a boil, cover and simmer for 10-15 minutes. Remove from heat, don’t open, and let sit
Combine all marinade ingredients together, pour into a plastic bag or dish and submerge the chicken (let marinate for minimum of 30 minutes)
Heat oil in a pan and once hot enough, turn heat to medium and add the chicken, cook through
Add a little of the extra marinade to the top of the chicken
Add 1 tbsp butter to the rice and fluff with a fork
Serve rice and chicken together and serve immediately!
