Masala Chicken with Rice

Ingredients:

Marinade:

  • 1 cup Plain Whole Milk Greek Yogurt

  • 2 Garlic Cloves, minced

  • 1 cup Masala Simmer Sauce (I get from Trader Joes)

  • 1/4 tsp Salt and Pepper

Other:

  • 1 cup Basmati Rice (uncooked)

  • 1 pound Chicken Breasts

  • 2 tbsp Butter

  • 1/4 tsp salt

  • 1 tbsp Olive Oil

Directions:

  1. Add 1 cup of rice, 1/4 tsp salt, and 2 cups of Chicken Broth (or water) to a pan, once the water comes to a boil, cover and simmer for 10-15 minutes. Remove from heat, don’t open, and let sit

  2. Combine all marinade ingredients together, pour into a plastic bag or dish and submerge the chicken (let marinate for minimum of 30 minutes)

  3. Heat oil in a pan and once hot enough, turn heat to medium and add the chicken, cook through

  4. Add a little of the extra marinade to the top of the chicken

  5. Add 1 tbsp butter to the rice and fluff with a fork

  6. Serve rice and chicken together and serve immediately!
