Hummus Pasta Salad

I chose Lantana Hummus for this post as I think the texture and their flavors work the best for this type of recipe! This recipe is using their Edamame flavor (i’m thinking about using the cucumber next time I make it!)

Recipe:

  • 1/2 container of Lantana Edamame Hummus

  • 1 box Pasta of choice

  • 1/2 minced Cucumber

  • 1/2 medium Red Onion

  • 1 medium Red Bell Pepper

  • 2 stalks Celery

  • 1-2 tbsp Extra Virgin Olive Oil

  • Crumbled Feta (desired amount)

  • Salt and Pepper as desired

  • Optional: halved black olives

Instructions:

  1. Cook pasta according to directions and save 1/2-1 cup pasta water for later and drain

  2. Combine all ingredients (except feta) in a separate bowl

  3. Add pasta and mix

  4. Whisk the hummus and pasta water slowly in a separate bowl until combined

  5. Pour hummus mixture over pasta and veggies, top with feta and then stir until all combined

  6. Sprinkle with salt and pepper and olive oil and taste test
