Tomato Pie
Ingredients:
3 medium fresh Tomatoes
1 pie shell/pie dish
10 fresh Basil leaves
1/2 tbsp dried Oregano
1/3 cup Mayo
1/3 cup plain Greek Yogurt or Cottage Cheese
1 cup Cheddar Cheese
1 cup Mozzarella Cheese
1/2 Vidalia Onion
Parmesan cheese for topping
Salt and Pepper, as desired
Directions:
Preheat oven to 350
Let the pie shell come to room temperature (helps it not break when you unroll it)
Slice tomatoes and lay out on a thick paper towel, press a clean paper towel into each tomato to remove some of the moisture
Mix the mayo, yogurt, minced onion, cheese and spices together in a separate bowl
Line the pie dish with the room temp pie shell
Cook for 5-10 minutes and remove from oven. Stab the bottom of the shell a few times with a fork to let in a little air at the bottom
Line the bottom of the pie with the tomatoes
Top with the cheese mixture (and a few tomatoes on top, optional) then sprinkle with the parm cheese
bake for 20-30 minutes or until the cheese is golden brown
Remove from oven, let cool for 30 minutes.
Enjoy at room temperature or reheated the next day for best results.
