Tomato Pie

Ingredients:

  • 3 medium fresh Tomatoes

  • 1 pie shell/pie dish

  • 10 fresh Basil leaves

  • 1/2 tbsp dried Oregano

  • 1/3 cup Mayo

  • 1/3 cup plain Greek Yogurt or Cottage Cheese

  • 1 cup Cheddar Cheese

  • 1 cup Mozzarella Cheese

  • 1/2 Vidalia Onion

  • Parmesan cheese for topping

  • Salt and Pepper, as desired

Directions:

  1. Preheat oven to 350

  2. Let the pie shell come to room temperature (helps it not break when you unroll it)

  3. Slice tomatoes and lay out on a thick paper towel, press a clean paper towel into each tomato to remove some of the moisture

  4. Mix the mayo, yogurt, minced onion, cheese and spices together in a separate bowl

  5. Line the pie dish with the room temp pie shell

  6. Cook for 5-10 minutes and remove from oven. Stab the bottom of the shell a few times with a fork to let in a little air at the bottom

  7. Line the bottom of the pie with the tomatoes

  8. Top with the cheese mixture (and a few tomatoes on top, optional) then sprinkle with the parm cheese

  9. bake for 20-30 minutes or until the cheese is golden brown

  10. Remove from oven, let cool for 30 minutes.

  11. Enjoy at room temperature or reheated the next day for best results.
