Blueberry Crumble Muffins
1-2 cups Blueberries
2 tsp baking powder
2 cups sifted flour
1/2 cup/4 ounce butter
2 eggs
1/2 tsp salt
1/2 tsp vanilla extract
1/2 cup milk of choice
1 cup sugar
Crumble Top: 1/4 cup flour, 2 tbsp sugar &1/4 tsp cinnamon and mix then slowly adding in melted butter until crumbly.
Preheat Oven on 350
Mix butter and sugar together until creamy
Add in eggs and blend
Add in salt, vanilla and baking powder and mix lightly
Slowly add in sifted flour 1/2 cup at a time until all is fully combined
Add milk and mix completely
Mash 1 cup of blueberries with a fork and fold them into the batter
Pour batter into greased muffin pan [For Muffin Tops— fill the cup almost to the top]
Add a few blueberries to the top of each muffin
Bake for 20-25 minutes or until golden brown around the edges
