Honey Ricotta Tomato Pasta

Ingredients:

  • 8oz Pasta

  • 2 tbsp Olive Oil

  • 1 tbsp Garlic Powder (I used the new Garlic Citrus powder from TJ’s)

  • 2 tbsp Tomato Paste

  • 1 tbsp Butter

  • 1/2 cup Half and Half

  • 1/2 tub (7 oz) Ricotta cheese (whole milk preferred)

  • 1/2 tsp Sea Salt

  • 1 tbsp Honey

  • 1/3 can Diced Tomatoes

Directions:

  1. Boil pasta in salted water according to directions and set aside (make sure the water is very salty).

  2. Add ricotta, honey and salt in a food processor (or just whip with a fork very hard or use a blender) and set aside, keeping ricotta mixture in food processor

  3. Oil a heated pan on medium add garlic or garlic powder, when it starts to become aromatic, add tomato paste and stir to mix (pan should seem a little dry)

  4. Add in the half and half to deglaze the pan (scrape the bottom of pan to get the flavors to come off the bottom)

  5. Add in butter and stir.

  6. Turn to low heat, add in diced tomatoes and stir. Let simmer for 5 min

  7. Add tomato mixture to the ricotta and pulse until very smooth, about a minute

  8. Add pasta back to low heat pan, pour ricotta tomato mixture over pasta, combine and enjoy!
