One Pot Healthy Alfredo Pasta

Ingredients

  • 2 tbsp Olive Oil
  • 1/2 Small Onion, minced
  • 4 Garlic Cloves, minced
  • 1 cup Half & Half
  • 2 cups Chicken Broth/Stock (or veggie)
  • 1 1/2 tbsp All-Purpose Flour
  • 1 tsp Dried Basil
  • 1 tsp Dried Parsley
  • 6 oz Pasta (penne preferred)
  • 1/2 cup Shredded Parmesan Cheese
  • Salt and pepper

Instructions

  1. Heat pan on medium high heat, add in oil, reduce to medium heat and add in minced onion, stir until slightly translucent 
  2. Add in minced garlic and stir to combine oil, onion and garlic.
  3. Once fragrant, pour in half & half to deglaze the pan, stir then add broth
  4. Add in flour and whisk until dissolved
  5. Sprinkle in spices, the uncooked pasta and stir to coat completely and make sure all pasta is under the liquid
  6. Bring to a boil, reduce heat to low, cover and leave on a simmer for 10ish minutes
  7. Stir, add parm, salt and pepper and combine
