Ingredients

  • 8oz Pasta
  • 2 tbsp Olive Oil
  • 1 tbsp Garlic Powder (or 2 minced fresh cloves)
  • 2 tbsp Tomato Paste
  • 1 tbsp Butter
  • 1/2 cup Half and Half
  • 1/2 tub (7 oz) Ricotta cheese (whole milk preferred)
  • 1/3 can Diced Tomatoes
  • 1 tbsp Honey
  • 1/2 tsp Sea Salt (and pepper to taste)

Instructions

  1. Boil pasta according to directions (generously salt your water!)
  2. Add ricotta, honey and salt in a food processor (or blender). You can also whip with a fork very hard. Keep in processor and set aside. 
  3. Heat pan on medium high heat, add oil and reduce heat to medium, add garlic or garlic powder. When it starts to become aromatic, add tomato paste and stir to mix (pan should seem a little dry)
  4. Add in the half and half to deglaze the pan (scrape the bottom of pan with a wooden spoon to remove the stuck bits)
  5. Add in butter and stir
  6. Reduce heat to low, add in diced tomatoes and stir. Let simmer for 5 min
  7. Add tomato mixture from pan to the ricotta and pulse until very smooth, about a minute
  8. Add cooked pasta back to low heat pan, pour ricotta tomato mixture over pasta, mix up and stir until fully combined
