White Bean and Arugula Dip

Ingredients:

  • 2-3 lightly packed cups Arugula

  • 1 can 15oz. can of white cannellini bean (drained and rinsed)

  • 2 Garlic Cloves, minced

  • 1/4 cup olive oil

  • 2 tbsp lemon juice or half lemon

  • 1/2 tsp sea salt

Directions:

  1. Drain and rinse beans

  2. Combine all ingredients in food processor/high powder blender/use immersion blender

  3. Add anything to taste (I added more beans and garlic)
