White Bean and Arugula Dip
Ingredients:
2-3 lightly packed cups Arugula
1 can 15oz. can of white cannellini bean (drained and rinsed)
2 Garlic Cloves, minced
1/4 cup olive oil
2 tbsp lemon juice or half lemon
1/2 tsp sea salt
Directions:
Drain and rinse beans
Combine all ingredients in food processor/high powder blender/use immersion blender
Add anything to taste (I added more beans and garlic)
