Sun Dried Tomato Basil Bean Dip

Ingredients:

  • 1 can White Cannelloni Beans (drained and rinsed)

  • Handful fresh basil

  • 2 cloves Garlic (or 1 tsp minced garlic)

  • 1/2 cup Sun-Dried Tomatoes (oil-packed jar)

  • Lemon (juice from 1/3 of the lemon) - may use more if desired

  • 1/2 tsp salt

  • Olive Oil

  • Optional add ins: pine nuts, couple spoonfuls of cream cheese

  • Optional toppings: more basil, red pepper flakes

Directions:

  1. Add all ingredients except oil in food processor, puree (stop and scrape down the sides)

  2. Slowly add in drizzles of olive oil to get the desired consistency

  3. Taste and add topping if desired
