Penne alla Vodka

Or as its usually called, Penne ala Vodka, but since I didn’t use penne and used bowtie, we’re going with either Bowtie ala Vodka or Pasta ala Vodka

Ingredients:

  • 12oz Pasta (I used bowtie)

  • 3 tbsp Grass-Fed Butter

  • 3 Garlic, cloves minced

  • 1 Yellow Onion (medium), chopped

  • 1 cup Vodka

  • 28oz can Crushed Tomatoes (I used about 3/4s) (+ I recommend using San Marzano)

  • 1/2 cup Heavy Cream or Coconut Milk (only the cream part)

  • 1 tbsp Oregano

  • 1 tsp Sea Salt

  • 1/2 tsp Black Pepper

  • 1/4 cup Parmesan cheese, finely shredded

  • 2 tbsp Fresh Basil, minced

Directions:

  1. Cook pasta according to directions, al dente

  2. Heat butter up on medium heat, add in the finely chopped onions, stir and cook until translucent and add in garlic, cook for 1-2 minutes

  3. Pour in vodka and break up the brown bits from the bottom of the pan if any. Stir and let reduce, about 5 minutes

  4. Add in about 3/4s can of crushed tomatoes and the oregano, salt, and pepper, stir and lower heat to low/simmer

  5. Pour in the cream and stir until fully combined, let simmer for about 5-7 minutes to thicken

  6. Stir in basil and parm cheese and add pasta to the mixture

  7. Coat pasta with sauce, serve immediately topped with more cheese if desired
