Creamy Protein Dairy Free Mac & Cheese
Ingredients:
1 box chickpea or lentil pasta
2 tsp minced garlic
4-5 tbsp nutritional yeast
1/4 large sweet onion
2 tbsp extra virgin olive oil
1 cup non dairy milk - start with 1/2 cup and keep adding to make thinner
Directions:
Bring water to a boil, add in a pinch of salt
Cook pasta as directed (once done, remove from water - keeping 1/2 cup of pasta water)- don't rinse pasta
Saute the onion in a pan until almost translucent
Add to food processor or high speed blender
Add remaining ingredients (except for milk)
Start adding milk slowly until desired consistency
Put dry pasta back in the pan and pour half of cheese mixture over the pasta and stir. Continue to add as much cheese as desired
