Banana Apple Peanut Butter Bread
Ingredients:
3 overripe bananas
1/3 cup coconut oil
1/4 cup maple syrup
2 eggs
1/4 cup milk
1/2 tsp salt
1 tsp baking soda
1 tsp vanilla
1 tsp apple spice
2 tsp cinnamon
1 3/4 white whole wheat flour
1/2 honey crisp apple
1/4 cup creamy peanut butter (or nut butter of choice, but needs to be liquidy)
Directions:
Preheat oven to 325 on bake and grease a bread pan
Mix the oil, maple syrup and whisked eggs together
Mash bananas until creamy, add to bowl with milk and combine together.
Add in vanilla, cinnamon, baking soda, apple spice and salt and stir to combine
Slowly add in flour about a 1/4 cup at a time. Add in, stir completely, add more and so on.
Pour batter into pan and put into oven
Bake for 30 min, remove from oven, add the layer of peanut butter and top with slices of the apple and cinnamon on top
Return to oven and bake for another 20 min (or until toothpick or fork comes out basically clean). I accidentally undercooked this a little and think it tasted the best that way! All up to you on how you like it
