Chicken & Waffles

You can always make waffles from scratch but this is an “easy and quick” version of your favorite brunch menu item! The chicken can be made in the air fryer, in the oven or fried in oil on your stove top! The pictures presented were done with the frying method.

Ingredients:

  • Waffle/Pancake Mix (I like to use Simple Mill, Food Stirs, Kodiak Cakes, Birch Benders, Bobs Red Mill)

  • 2 Chicken Breasts (thinly sliced)

  • 1 cup Panko Bread Crumbs (I don’t recommend any other breading options)

  • 1-2 Eggs

  • Salt and Pepper to taste

Directions:

  1. Crack egg and whisk in a bowl with salt and pepper

  2. Pour panko crumbs in separate bowl

  3. Pat the chicken breasts until very dry

  4. Dip the chicken into the egg mixture

  5. Dredge the chicken in the panko until completely coated

  6. Air Fryer on 400 for 10-15 minutes OR in the OVEN on 350 for 30 minutes

  7. OR fry on the stove

  8. Top waffle with chicken, add a slab of grass fed butter, drizzle with syrup and ENJOY!

TO FRY:

  1. Fill a sauté pan (with higher walls) with avocado oil on high.

  2. Drop chicken in oil with tongs and immediately cover with a top (possibly will splatter a lot. (be VERY careful!!!)

  3. Remove pan from heat and once splattering goes down, turn chicken over with long tongs to finish browning (again be very careful)

  4. After a couple minutes, remove chicken and let cool on cooling rack for a minute or two
