Banana Sushi Rolls

These banana sushi rolls are made with peanut butter, granola, chia seeds and honey! You can use any flavor of granola (I just love mixing vanilla and chocolate flavors together!), use chia seeds or none at all. Go crazy and add some mini chocolate chips, flax seed, etc.

It is also high in protein and gluten free. You can make these into actual roll ups with a tortilla or leave them out! I should worn you… this gets MESSY, but its worth it!

Ingredients (1 serving)

  • 1 Ripe Banana

  • 1/2 cup Peanut Butter (no added sugar or oils) or any nut butter

  • 1/2 cup Granola

  • 1 tbsp Chocolate Chia Seeds

  • Drizzle of Manuka (or regular/raw) Honey

  • Optional: Tortilla for rolling

Directions:

  1. Peel the banana and slice off the ends

  2. Pour the peanut butter on a plate and a granola on a separate plate

  3. Cover banana in the peanut butter and then roll it onto granola to fully coat

  4. Drizzle with honey and top with chocolate chia seeds

  5. Cut into rounds and ENJOY!
