Penne alla Vodka

Ingredients
- 12oz Pasta (I used bowtie)
- 3 tbsp Grass-Fed Butter
- 3 Garlic, cloves minced
- 1 medium Yellow Onion, chopped
- 1 cup Vodka
- 28oz can Crushed Tomatoes (I used about 3/4s) (+ I recommend using San Marzano)
- 1/2 cup Heavy Cream or Coconut Milk (only the cream part)
- 1 tbsp Oregano
- 1 tsp Sea Salt
- 1/2 tsp Black Pepper
- 1/4 cup Parmesan cheese, finely shredded
- 2 tbsp Fresh Basil, chopped
Instructions
- Cook pasta according to directions, al dente
- Heat butter up on medium heat, add in the finely chopped onions, stir and cook until translucent and add in garlic, cook for 1-2 minutes
- Pour in vodka, deglaze, breaking up the brown bits from the bottom of the pan with wooden spoon. Stir turning heat to low and let reduce, about 5 minutes
- Add in the crushed tomatoes, oregano, salt, and pepper, stir and lower heat to low for a simmer
- Pour in the cream and stir until fully combined, let simmer for about 5-7 minutes to thicken
- Stir in basil and parmesan cheese and add cooked pasta to the mixture
- Coat pasta with sauce, serve immediately topped with more cheese if desired
