Ingredients

  • 12oz Pasta (I used bowtie)
  • 3 tbsp Grass-Fed Butter
  • 3 Garlic, cloves minced
  • 1 medium Yellow Onion, chopped
  • 1 cup Vodka
  • 28oz can Crushed Tomatoes (I used about 3/4s) (+ I recommend using San Marzano)
  • 1/2 cup Heavy Cream or Coconut Milk (only the cream part)
  • 1 tbsp Oregano
  • 1 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 1/4 cup Parmesan cheese, finely shredded
  • 2 tbsp Fresh Basil, chopped

Instructions

  1. Cook pasta according to directions, al dente
  2. Heat butter up on medium heat, add in the finely chopped onions, stir and cook until translucent and add in garlic, cook for 1-2 minutes
  3. Pour in vodka, deglaze, breaking up the brown bits from the bottom of the pan with wooden spoon. Stir turning heat to low and let reduce, about 5 minutes
  4. Add in the crushed tomatoes, oregano, salt, and pepper, stir and lower heat to low for a simmer
  5. Pour in the cream and stir until fully combined, let simmer for about 5-7 minutes to thicken
  6. Stir in basil and parmesan cheese and add cooked pasta to the mixture
  7. Coat pasta with sauce, serve immediately topped with more cheese if desired
