One Pot Noodle Curry

Ingredients

  • 1 package Rice Noodles
  • 2 tbsp Grass-Fed Butter/Ghee/Olive Oil
  • 1/2 cup Onion, minced
  • 2 Cloves Garlic, minced
  • 2 tbsp Curry Powder
  • 1 tbsp Sesame Oil
  • 2 tbsp Coconut or Liquid Aminos
  • 1 1/2 Cup Full Fat Coconut Milk (from can)
  • 1/2 Cup Frozen Peas
  • 1/2 Cup Frozen Carrots
  • salt and pepper, to taste

Instructions

  1. Remove peas and carrots from the freezer to thaw a little
  2. Boil water and cook noodles as directed
  3. Heat oil on med/high in saute pan, add onions and garlic and cook until translucent
  4. Stir in curry powder, salt, and pepper
  5. Add all liquids to the pan to deglaze and combine together
  6. Stir in peas and carrots and let the mixture come to a bubble
  7. Turn down heat to low/med and let simmer for a few minutes
  8. Then if to thick, add more liquid and let simmer again to soak up the flavors
  9. Remove from heat, let rest, and top with desired toppings!
