Instructions
 

  • Preheat oven to 400°F (200°C). Toss tomatoes with olive oil, all seasonings, garlic and shallots in a roasted pan. Roast 15 minutes or until tomatoes start to open up. Add the block of cheese to middle of pan and cook for another 15 minutes.
  • Boil salted water, cook pasta al dente. Reserve 1 cup pasta water. Drain.
  • Remove from oven and break any tomatoes up that are still in tact. Combine the cheese with the tomatoes until it melts into a sauce.
  • Add pasta. Toss, adding pasta water as needed.
  • Stir in Parmesan. Season to taste. Garnish with basil or parsley.
