Roasted Tomato Boursin Cheese Pasta

- 1 pint cherry tomatoes
- 2 tbsp olive oil
- Salt & black pepper
- 1/2 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp onion powder
- 3 cloves garlic minced
- 1 large shallot diced
- 5.2 oz Garlic & Herb Boursin cheese
- 8 oz pasta
- ½ cup grated Parmesan
- Optional: fresh basil or parsley
Preheat oven to 400°F (200°C). Toss tomatoes with olive oil, all seasonings, garlic and shallots in a roasted pan. Roast 15 minutes or until tomatoes start to open up. Add the block of cheese to middle of pan and cook for another 15 minutes.
Boil salted water, cook pasta al dente. Reserve 1 cup pasta water. Drain.
Remove from oven and break any tomatoes up that are still in tact. Combine the cheese with the tomatoes until it melts into a sauce.
Add pasta. Toss, adding pasta water as needed.
Stir in Parmesan. Season to taste. Garnish with basil or parsley.
