Sun Dried Tomato Basil Bean Dip
Ingredients
- 1 can White Cannelloni Beans (drained and rinsed)
- Handful fresh basil
- 2 cloves Garlic (or 1 tsp minced garlic)
- 1/2 cup Sun-Dried Tomatoes (oil-packed jar)
- Lemon (juice from 1/3 of the lemon) - may use more if desired
- 1/2 tsp salt
- Olive Oil
- Optional add ins: pine nuts, couple spoonfuls of cream cheese
- Optional toppings: more basil, red pepper flakes
Instructions
- Add all ingredients except oil in food processor, puree (stop and scrape down the sides)
- Slowly add in drizzles of olive oil to get the desired consistency
- Taste and add topping if desired
