Roasted Red Pepper Curry Sauce

Ingredients

  • 1/2 cup Cashews, soaked
  • 1 Red Bell Pepper
  • 1 tbsp Bone Broth (or can use any liquid)
  • 1 tbsp Curry Powder
  • 1 tbsp Paprika
  • 1/2 tsp Cayenne Pepper (or more if desired)
  • 2 tsp Olive Oil

Instructions

  1. Place pepper on baking sheet and put in the oven on 450 until blackened (or you can put it directly on the gas on your stove burner)
  2. While that’s cooking place everything except the oil in a food processor and blend
  3. Once pepper is blackened, cut to remove insides, remove all the black skin and then cut into chunks
  4. Place pepper in food processor. Start blending while slowly add in the oil.
  5. Blend until desired consistency. Add more bone broth if too thick.
