No Bake Pumpkin Cheesecake Balls
Ingredients
6oz Cream Cheese (Full Fat)
1/2 can Pumpkin
1 tsp Pumpkin Pie Spice
1/2 tsp Cinnamon
3 tbsp Coconut Flour
2 tbsp Maple Syrup
3 Graham Crackers (2 for the balls, 1 for topping)
Directions:
Beat cream cheese and pumpkin with an electric mixer until smooth
Add in both spices and syrup and mix well
Add in flour slowly, 1 tbsp at a time, mixing on low/medium
Once everything is combined, fold in crushed graham crackers
Use an ice cream scoop, spoon or your hands to roll into balls (top with extra crumbled graham cracker if desired)
Let set in the freezer for 2 hours
Move to the fridge and eat within 2-3 days (or store in the freezer for up to 2 weeks)
