Loaded Sweet Potato Skins

Ingredients

Loaded Sweet Potato Skins
  • 4 medium Sweet Potatoes
  • 1/2 cup Black Beans, drained and rinsed
  • 1 tbsp Corn
  • 1 tbsp Salsa
  • 1/8 tsp Sea Salt 
  • 1 tsp Cumin
  • 3/4 cup Shredded Cheese
  • 3 tbsp cup Sour Cream
  • 1 tsp Paprika
  • Olive Oil
  • Optional: bacon, chives

Instructions

  1. Preheat oven to 400 bake
  2. Wash and dry potatoes and pierce each one with a fork several times and bake for 40-50 minutes, or until soft (leave oven on for later use)
  3. Allow potatoes to slightly cool then cut halfway, lengthwise and then lengthwise again, making 4 skins per potato
  4. Scoop out the flesh from each skin (leaving a thin layer at the bottom of each) and add to a bowl
  5. Spray or drizzle a little olive oil onto the skins and bake for 10 minutes or until crispy
  6. While skins are in the oven, add black beans, corn, salsa and spices to the mashed potato mixture and mash/mix until fully combined
  7. Remove empty skins from oven and evenly scoop the mash mixture into each, top with cheese and broil on low until cheese melts, about 3 minutes (make sure to watch so it doesn't burn!)
  8. Mix sour cream and paprika together and add a dash of water to thin out for drizzle purposes
  9. Remove from oven, drizzle sour cream and any other toppings preferred, enjoy immediately!
