Lemon Garlic Kale Pasta

A light pasta dish with some extra greens and nutrients!
Plus, the kale adds a great texture element
Ingredients
- 1/2 Box Spaghetti, 4 oz
- 2 tbsp Butter
- 3 cloves Garlic, minced
- Juice from 1 Lemon
- 6 oz Curly Kale, stalks removed
- 1/4-1/2 cup Chicken Broth (or pasta water)
- 1/8 tsp Garlic Powder
- Salt and Pepper, to taste
- 2 tbsp Shredded Parmesan
- optional: Red Pepper Flakes
Instructions
- Cook pasta according to directions (don't forget to generously salt your water!)
- Heat up pan, add olive oil and butter then add garlic and stir until fragrant
- Add half the amount of kale and stir, let wilt for a few minutes
- Sprinkle with salt pepper and garlic powder and half the lemon juice
- Once pasta is al dente, add to the pan and stir well until combined
- Add the rest of the kale and the broth/water and stir
- Add red pepper flakes and parmesan cheese
- Pour in other half of the lemon juice, stir to combine!
