Lemon Garlic Kale Pasta

A light pasta dish with some extra greens and nutrients! Plus, the kale adds a great texture element

Ingredients

  • 1/2 Box Spaghetti, 4 oz
  • 2 tbsp Butter
  • 3 cloves Garlic, minced
  • Juice from 1 Lemon
  • 6 oz Curly Kale, stalks removed
  • 1/4-1/2 cup Chicken Broth (or pasta water)
  • 1/8 tsp Garlic Powder
  • Salt and Pepper, to taste
  • 2 tbsp Shredded Parmesan
  • optional: Red Pepper Flakes

Instructions

  1. Cook pasta according to directions (don't forget to generously salt your water!)
  2. Heat up pan, add olive oil and butter then add garlic and stir until fragrant
  3. Add half the amount of kale and stir, let wilt for a few minutes
  4. Sprinkle with salt pepper and garlic powder and half the lemon juice
  5. Once pasta is al dente, add to the pan and stir well until combined
  6. Add the rest of the kale and the broth/water and stir
  7. Add red pepper flakes and parmesan cheese
  8. Pour in other half of the lemon juice, stir to combine!
