Healthy Egg Salad Sandwich
Yield: 2-3 sandwiches
Ingredients:
6 hard-boiled eggs (8ish minute boil)
3 tbsp Mayo (I used avocado oil base mayo)
2 tsp Dijon Mustard (or whole grain)
1 Celery Stalk, minced
1/3 Red Bell Pepper, minced
1/2 tbsp Green Onion, minced (scallion/white part)
1/4-1/2 tbsp Green Onion, minced (chive/green part)
1/4 tsp Sea Salt
1/8 tsp Ground Black Pepper
Directions:
Hard-boil 6 eggs (place eggs in a pot and cover completely with water, let the water come to a boil and then set timer for 8 minutes). Remove eggs after 8 minutes and place them in a bowl of cold ice water to stop cooking. Remove the shells and chop eggs into fine/small pieces and place in a mixing bowl
Add all other ingredients and mix with a spatula until fully combined
Set in fridge to get cold/set to increase flavors, if desired
Toast 2 pieces of seedy grain or sourdough bread to your liking
Top bread with your desired amount of egg salad, cut in half, and enjoy!
