Healthy Egg Salad Sandwich

Yield: 2-3 sandwiches

Ingredients:

  • 6 hard-boiled eggs (8ish minute boil)

  • 3 tbsp Mayo (I used avocado oil base mayo)

  • 2 tsp Dijon Mustard (or whole grain)

  • 1 Celery Stalk, minced

  • 1/3 Red Bell Pepper, minced

  • 1/2 tbsp Green Onion, minced (scallion/white part)

  • 1/4-1/2 tbsp Green Onion, minced (chive/green part)

  • 1/4 tsp Sea Salt

  • 1/8 tsp Ground Black Pepper

Directions:

  1. Hard-boil 6 eggs (place eggs in a pot and cover completely with water, let the water come to a boil and then set timer for 8 minutes). Remove eggs after 8 minutes and place them in a bowl of cold ice water to stop cooking. Remove the shells and chop eggs into fine/small pieces and place in a mixing bowl

  2. Add all other ingredients and mix with a spatula until fully combined

  3. Set in fridge to get cold/set to increase flavors, if desired

  4. Toast 2 pieces of seedy grain or sourdough bread to your liking

  5. Top bread with your desired amount of egg salad, cut in half, and enjoy!
