Healthy Banana Bread Muffins
Ingredients:
3 over ripe Bananas
2 1/2 tbsp melted and cooled Butter
2 1/2 tbsp Coconut Oil (can also use Olive Oil)
1/3 Maple Syrup
1/4 cup Milk (or water)
2 tsp Vanilla Extract
1 tsp Baking Soda
1 3/4 cup Cassava Flour (can sup for AP flour, whole wheat, oat, almond)
1/4 cup Oats
2 Eggs
1 tsp Cinnamon
Chocolate Chips are Optional - or any other toppings/add ins
Directions:
Preheat to 350 Bake
Mix together the mashed banana, syrup, oil, butter and milk
Add in baking soda and vanilla, mix well
While mixing, add in the flour 1/4 cup at a time until fully incorporated.
Add in the oats, cinnamon and salt (and any other add ins) and stir
Fill the greased muffins tins a little higher than 2/3 full
Top with cinnamon/chocolate or nothing
Bake for 20 minutes or until fork can come out clean
