Healthy Banana Bread Muffins

Ingredients:

  • 3 over ripe Bananas

  • 2 1/2 tbsp melted and cooled Butter

  • 2 1/2 tbsp Coconut Oil (can also use Olive Oil)

  • 1/3 Maple Syrup

  • 1/4 cup Milk (or water)

  • 2 tsp Vanilla Extract

  • 1 tsp Baking Soda

  • 1 3/4 cup Cassava Flour (can sup for AP flour, whole wheat, oat, almond)

  • 1/4 cup Oats

  • 2 Eggs

  • 1 tsp Cinnamon

  • Chocolate Chips are Optional - or any other toppings/add ins

Directions:

  1. Preheat to 350 Bake

  2. Mix together the mashed banana, syrup, oil, butter and milk

  3. Add in baking soda and vanilla, mix well

  4. While mixing, add in the flour 1/4 cup at a time until fully incorporated.

  5. Add in the oats, cinnamon and salt (and any other add ins) and stir

  6. Fill the greased muffins tins a little higher than 2/3 full

  7. Top with cinnamon/chocolate or nothing

  8. Bake for 20 minutes or until fork can come out clean
