Chocolate Banana Pumpkin Bites
Ingredients:
1 1/2 cup Flour (AP, Wheat, Almond) - sifted
1/2 cup sugar (I used Date Sugar)
1/2 tsp Baking Soda
2 eggs
1/2 cup Pumpkin Puree (from a can)
1/2 cup Yogurt (Whole Milk)
2 tbsp Ghee
2 Over Ripened Banana
1/2 cup Chocolate Chips
Directions:
Preheat oven to 350 degrees and grease a bread pan (or parchment paper)
Whisk together wet ingredients (eggs, yogurt, ghee, pumpkin, and mashed banana) until combined
Add in dry ingredients (flour, sugar and baking soda) and mix well
Fold in chocolate chips with a spatula
Pour into pan, top with more chocolate chips (optional)
Bake for 40-45 minutes or until a toothpick comes out clean
