Chocolate Banana Pumpkin Bites

Ingredients:

  • 1 1/2 cup Flour (AP, Wheat, Almond) - sifted

  • 1/2 cup sugar (I used Date Sugar)

  • 1/2 tsp Baking Soda

  • 2 eggs

  • 1/2 cup Pumpkin Puree (from a can)

  • 1/2 cup Yogurt (Whole Milk)

  • 2 tbsp Ghee

  • 2 Over Ripened Banana

  • 1/2 cup Chocolate Chips

Directions:

  • Preheat oven to 350 degrees and grease a bread pan (or parchment paper)

  • Whisk together wet ingredients (eggs, yogurt, ghee, pumpkin, and mashed banana) until combined

  • Add in dry ingredients (flour, sugar and baking soda) and mix well

  • Fold in chocolate chips with a spatula

  • Pour into pan, top with more chocolate chips (optional)

  • Bake for 40-45 minutes or until a toothpick comes out clean
