Air Fried Potato Wedges
Ingredients:
4 Russet Potatoes
1 Tbsp Olive Oil
4 Slices Bacon
1/2 cup Shredded Cheese
2 Green Onions
Salt and Pepper
Directions:
Cook bacon according to directions, once cooled crumble and set aside
Poke holes in the potatoes and cook each potato in the microwave for 5 minutes
Cut the potatoes in half, horizontally
Scoop out the potato, leaving 1-2 inches of potato. Save the inside of the potato for something else (maybe mashed potatoes)
Brush the inside and outside of the potatoes with olive oil and sprinkle with sea salt
Air fry the potatoes until slightly crispy (5-10 minutes)
Remove from the air fryer, fill with cheese and broil until cheese is melty
Top with bacon crumbles and minced green onions
