Healthy Vegan Mac & Cheese

Ingredients

  • 1/2 bag pasta of choice, about 8 oz
  • 1 tbsp oil (I used avocado oil)
  • 1 Medium Onion, minced
  • 4 Cloves Garlic, minced
  • 2 tbsp Butter (or vegan butter)
  • 1/2 cup Raw Unsalted Cashews, soaked for minimum 2 hours
  • 1/2-3/4 cup Milk (or non-dairy milk)
  • 3 tbsp Nutritional Yeast

Instructions

  1. Cook pasta according to directions and set aside
  2. Heat a sauté pan on high heat, add oil and reduce heat to medium
  3. Add in chopped onion and cashews
  4. As onion starts to get translucent, add in minced garlic and and stir
  5. As garlic becomes fragrant, add in cold butter, let melt and stir together
  6. Transfer mixture to food processor to high speed blender, add in (1/2 cup) milk and nutritional yeast and blend
  7. Add more milk if needed
  8. Toss pasta back in pan and pour “cheese” sauce over pasta. Stir gently to coat completely.
  9. Add salt and pepper, toss and serve!
