Tomato Pie
Tomato Pie
Ingredients
- 3 medium fresh Tomatoes
- 1 Pie shell/Pie dish
- 10 fresh Basil leaves
- 1/2 tbsp Dried Oregano
- 1/3 cup Mayo
- 1/3 cup plain Greek Yogurt or Cottage Cheese
- 1 cup Cheddar Cheese
- 1 cup Mozzarella Cheese
- 1/2 medium Onion, sliced
- Parmesan cheese for topping
- Salt and Pepper, as desired
Instructions
- Preheat oven to Bake 350 degrees
- Let the pie shell come to room temperature (helps it not break when you unroll it)
- Slice tomatoes and lay out on a thick paper towel, press a clean paper towel into each tomato to remove some of the moisture
- Mix the mayo, yogurt, minced onion, cheese and spices together in a separate bowl
- Line the pie dish with the room temp pie shell
- Cook for 5-10 minutes and remove from oven. Stab the bottom of the shell a few times with a fork to let in a little air at the bottom
- Line the bottom of the pie with the tomatoes
- Top with the cheese mixture (and a few tomatoes on top, optional) then sprinkle with the parmesan cheese
- Bake for 20-30 minutes or until the cheese is golden brown
- Remove from oven, let cool for 30 minutes.
- Enjoy at room temperature or reheated the next day for best results.
