Classic Crockpot Chili

Ingredients

  • 1 lb Ground Beef (85/15%)
  • 1/2 large Onion, diced
  • 3 garlic cloves, minced
  • 1 28oz can Peeled Tomatoes, I recommend using San Marzano tomatoes
  • 1 can (8oz) tomato sauce
  • 1/4 cup Beef Broth
  • 1 can Green Chilis
  • 1 tbsp Chil Powder
  • 1 heaping tsp Cumin
  • 1 tsp Smoked Paprika
  • 1/4 tsp Onion powder
  • 1/4 tsp Garlic Powder
  • 1/2 tsp salt and pepper
  • 1 tbsp maple syrup
  • 1 can Light Kidney Beans, drained and rinsed
  • 1 can Pinto Beans, drained and rinsed

Instructions

  1. 1. Heat pan on high heat, add oil and reduce to medium high heat. Add in diced onions and stir until fragrant (~3 minutes) then dd in minced garlic and stir, about 30 seconds. Transfer mixture to heated crockpot.
  2. 2. Return pan to stove on medium high heat and add in ground beef until browned (breaking it up as it cooks). Once cooked through, do not drain and add the crockpot.
  3. 3. Pour the can of peeled tomatoes into a bowl and smoosh the with your hands until smooth. Pour about 3/4 of that into the crockpot and save the other 1/4 if needed for later
  4. 4. Add in the tomato sauce, beef broth, all spices, maple syrup and green chilis and stir until combined. Set crockpot on Low heat for 5 hours
  5. 5. After 4 or 5 hours, add in both cans of beans and stir. Let it continue to cook for 30 or so minutes and enjoy!
