Chocolate Peanut Butter Rice Crispy Treats
Ingredients
- 4 cups Rice Crisps (I used the cacao from One Degree Organics)
- 1 bag Marshmallows (I used Dandies)
- 1/4 cup Peanut Butter (no oil or sugar added)
- 2 tbsp Grass Fed Butter or Ghee
Instructions
- Boil water on the stove and place another pot over top to create a double boiler
- Place butter and marshmallows into the top pot and add 2 tbsp of water
- Continue to stir every minute for 10 minutes or so, breaking up the marshmallows until completely melted
- OR — you can just place butter and marshmallows in a bowl and melt in the microwave
- Place crisps in a large bowl, top with peanut butter and stir
- Once everything is melted with minimal lumps, add to crisp mixture and stir until everything is coated and sticking together
- Place in an 8x8 pan (a bread pan for thicker treats!) and press down evenly
- Let sit in the fridge for an hour before removing and cutting into squares
