Creamy Sausage, Tomato, and Kale Pasta

Ingredients
- 1/2 package Mueller’s Garlic & Chive Flavor Infused Penne Rigate, or Penne of choice
- 1 tbsp Olive Oil (or oil of choice)
- 1 tbsp Butter
- 2 tbsp Tomato Paste
- 1/4 cup Coconut Milk (full fat preferred)
- 1/2 Sweet Onion, roughly chopped
- 10 Fresh Mini/Cherry Tomatoes (some cut in fourths and some cut in halves depending on size)
- 1/2 Block of Cream Cheese (4 ounces)
- 1/3 Package of 16oz Ground Sausage (~6ish ounces, crumbled)
- 1/4 tsp Garlic Powder
- 3 Handfuls Curly Kale, stems removed and roughly chopped
- 1/4 cup Half & Half
- 2 tsp Sea Salt
- Pepper to taste
Instructions
- Boil water and cook Mueller’s Garlic & Chive Flavor Infused Penne pasta for about 8 min
- Heat pan, pour in oil once hot then on medium heat, add butter and let melt
- Once butter has melted, add tomato paste and stir
- Pour in 1/4 cup coconut milk and de glaze using a wooden spoon to scrape off the brown bits from the bottom, add 1/2 amount of kale, and reduce heat to low for a simmer
- Add chopped onion, 3/4 of the tomatoes, 1/2 the cream cheese, and stir
- Push mixture to the side, up heat to medium-high, and add in the crumbled sausage to open space, season with the garlic powder.
- Once it starts to cook, start to break it up a bit and reduce heat to medium. Mix everything together until fully combined
- Add in al dente pasta and stir
- Pour in half and half and reduce to heat to low/med. Add the halved tomatoes and last half of the kale. Cover and let simmer for a few minutes
- Uncover, stir and serve!
