Creamy Sausage, Tomato, and Kale Pasta

Ingredients

  • 1/2 package Mueller’s Garlic & Chive Flavor Infused Penne Rigate, or Penne of choice
  • 1 tbsp Olive Oil (or oil of choice)
  • 1 tbsp Butter
  • 2 tbsp Tomato Paste
  • 1/4 cup Coconut Milk (full fat preferred)
  • 1/2 Sweet Onion, roughly chopped
  • 10 Fresh Mini/Cherry Tomatoes (some cut in fourths and some cut in halves depending on size)
  • 1/2 Block of Cream Cheese (4 ounces)
  • 1/3 Package of 16oz Ground Sausage (~6ish ounces, crumbled)
  • 1/4 tsp Garlic Powder
  • 3 Handfuls Curly Kale, stems removed and roughly chopped
  • 1/4 cup Half & Half
  • 2 tsp Sea Salt
  • Pepper to taste

Instructions

  1. Boil water and cook Mueller’s Garlic & Chive Flavor Infused Penne pasta for about 8 min
  2. Heat pan, pour in oil once hot then on medium heat, add butter and let melt
  3. Once butter has melted, add tomato paste and stir 
  4. Pour in 1/4 cup coconut milk and de glaze using a wooden spoon to scrape off the brown bits from the bottom, add 1/2 amount of kale, and reduce heat to low for a simmer
  5. Add chopped onion, 3/4 of the tomatoes, 1/2 the cream cheese, and stir
  6. Push mixture to the side, up heat to medium-high, and add in the crumbled sausage to open space, season with the garlic powder.
  7. Once it starts to cook, start to break it up a bit and reduce heat to medium. Mix everything together until fully combined
  8. Add in al dente pasta and stir 
  9. Pour in half and half and reduce to heat to low/med. Add the halved tomatoes and last half of the kale. Cover and let simmer for a few minutes
  10. Uncover, stir and serve!
