Ingredients

  • 1 lb ground beef – Juicy savory, and full of flavor.
  • 2 garlic cloves minced – Enhances the umami and rounds out the flavor.
  • 1 packet taco seasoning – Quick balanced blend of chili, cumin, and spices.
  • 1/2 tsp smoked paprika optional – Boosts smokiness and warmth.
  • 1/4 cup beef broth or stock – Keeps the beef moist and flavorful.
  • 1/3 cup ranch dressing – Adds coolness and herby richness.
  • 1 –2 tbsp hot sauce or buffalo sauce – Brings the heat adjust to taste.
  • 1/2 cup shredded cheddar or Mexican blend cheese – Melts into the filling for gooey goodness.
  • 6-8 small soft tortillas flour or corn
  • Olive oil or cooking spray – Light brushing helps the tortillas crisp in the oven.

Instructions

  • Preheat oven to 375°F. Lightly grease a large baking dish with olive oil or spray.
  • In a skillet over medium heat, add garlic and cook for 30 seconds.
  • Add ground beef and cook for 2 minutes.
  • Stir in taco seasoning, smoked paprika (if using), and 1/4 cup beef broth. Simmer for 2–3 minutes until slightly thickened.
  • Wrap tortillas in a damp paper towel and microwave for 30–45 seconds to soften, or warm them briefly in a skillet.
  • Spoon 2–3 tablespoons of the beef mixture into each tortilla. Sprinkle a little shredded cheese on top. Add ranch. Fold them in half like tacos, or roll them like taquitos.
  • Arrange in the baking dish slightly overlapping.
  • Lightly brush the tops with olive oil. Bake uncovered for 12–15 minutes, until cheese is melted and tortillas are slightly crispy on the edges.
  • Serve hot with shredded lettuce, diced tomatoes, avocado, or a drizzle of extra ranch or hot sauce if you’re feeling bold.
