Pasta a la Passion

- 1 pound Boneless Skinless Chicken Breasts cut into small chunks
- 2 cups Broccoli Florets
- 3 Garlic cloves minced
- 2 tbsp Olive Oil
- * ½ tsp salt and freshly ground pepper
- 1/2 cup Marsala Wine
- 1 cup Chicken Broth
- 1 tbsp Butter
- ½ cup Sun-Dried Tomatoes in oil, diced
- 8 oz Farfalle Pasta
- ¼ cup Freshly Grated Parmesan Cheese
Saute the garlic and oil on medium, until fragrant then add diced chicken until almost fully cooked
Add in sun-dried tomatoes (with their oil), seasonings, wine, and chicken broth and stir, let simmer for about 5 minutes
Add butter and stir cook for another few minutes
Boil a large pot of salted water
Add broccoli to boiling water and blanch until tender (a few minutes)
With a slotted spoon, add broccoli to the simmering sauce
Add pasta to boiling water and cook until done, according to directions on the box
Save ½ cup of pasta water
Add pasta to the sauce and stir until evenly distributed and combined (use pasta water if needed)
Top with parmesan cheese and serve!
