Ingredients
  

  • 1 pound Boneless Skinless Chicken Breasts cut into small chunks
  • 2 cups Broccoli Florets
  • 3 Garlic cloves minced
  • 2 tbsp Olive Oil
  • * ½ tsp salt and freshly ground pepper
  • 1/2 cup Marsala Wine
  • 1 cup Chicken Broth
  • 1 tbsp Butter
  • ½ cup Sun-Dried Tomatoes in oil, diced
  • 8 oz Farfalle Pasta
  • ¼ cup Freshly Grated Parmesan Cheese

Instructions
 

  • Saute the garlic and oil on medium, until fragrant then add diced chicken until almost fully cooked
  • Add in sun-dried tomatoes (with their oil), seasonings, wine, and chicken broth and stir, let simmer for about 5 minutes
  • Add butter and stir cook for another few minutes
  • Boil a large pot of salted water
  • Add broccoli to boiling water and blanch until tender (a few minutes)
  • With a slotted spoon, add broccoli to the simmering sauce
  • Add pasta to boiling water and cook until done, according to directions on the box
  • Save ½ cup of pasta water
  • Add pasta to the sauce and stir until evenly distributed and combined (use pasta water if needed)
  • Top with parmesan cheese and serve!
