French Onion Ramen

A cozy twist on French onion soup with buttery caramelized onions, savory broth, ramen noodles, and melty Gruyère cheese — pure comfort in a bowl.

Ingredients
  

  • 3 large yellow onions thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp sugar optional
  • 2 cloves garlic minced
  • 1 tbsp soy sauce
  • 1 tbsp Worcestershire sauce
  • ½ cup white wine or sherry optional
  • 4 cups beef broth or vegetable
  • 1 tsp miso paste optional
  • 2 –3 blocks ramen noodles discard packets
  • ½ cup shredded Gruyère or Swiss cheese
  • Fresh thyme or parsley for garnish
  • Black pepper to taste

Instructions
 

Caramelize the Onions

  • In a large pot, melt butter and olive oil over medium-low heat. Add sliced onions and salt. Cook 25–30 minutes, stirring occasionally, until deeply golden and jammy. Add sugar halfway through to help the process.

Build the Broth

  • Add garlic, soy sauce, and Worcestershire. Deglaze with wine or sherry and scrape up any browned bits. Pour in broth and simmer for 10 minutes. Whisk in miso paste if using.

Cook the Noodles

  • Add ramen noodles and cook until just tender (about 2–3 minutes).

Add the Cheese

  • Ladle the ramen into oven-safe bowls, top with shredded Gruyère, and broil for 1–2 minutes until bubbly and golden. Garnish with thyme and pepper.
