- 3 large yellow onions thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp sugar optional
- 2 cloves garlic minced
- 1 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- ½ cup white wine or sherry optional
- 4 cups beef broth or vegetable
- 1 tsp miso paste optional
- 2 –3 blocks ramen noodles discard packets
- ½ cup shredded Gruyère or Swiss cheese
- Fresh thyme or parsley for garnish
- Black pepper to taste
Caramelize the Onions
In a large pot, melt butter and olive oil over medium-low heat. Add sliced onions and salt. Cook 25–30 minutes, stirring occasionally, until deeply golden and jammy. Add sugar halfway through to help the process.
