- 8 oz Asian noodles wheat, udon, or ramen
- 2 tbsp butter
- 2-3 tbsp chili garlic crunch adjust to taste
- 2 tbsp soy sauce
- ½ cup pasta water as needed
- 1 cup scallions thinly sliced
Bring a pot of water to a boil and cook the noodles according to the package instructions. Reserve about ½ cup of pasta water before draining.
In a large skillet, melt 2 tablespoons of butter over medium heat. Add 2-3 tablespoons of chili garlic crunch and cook for 30 seconds until fragrant. Stir in 2 tablespoons of soy sauce and about ¼ cup of reserved pasta water. Let it simmer for 1-2 minutes until slightly thickened.
Add the cooked noodles to the skillet and toss until they’re well-coated in the sauce. Add more pasta water if needed to achieve your desired consistency.
Remove from heat and toss in 1 cup of thinly sliced scallions. Serve immediately, garnished with extra chili garlic crunch if desired.
