Brown Butter Miso Noodles

Ingredients
  

  • 8 oz pasta spaghetti, bucatini, or fettuccine work great
  • 8 tbsp 1 stick unsalted butter
  • 1 medium shallot finely minced
  • 2 garlic cloves grated or finely chopped
  • 3 tbsp white miso paste
  • –½ cup reserved pasta water
  • Freshly ground black pepper to taste
  • Optional toppings: grated Parmesan chives, scallions, crispy shallots, or a jammy egg

Instructions
 

Boil the pasta

  • Cook your pasta in salted water until al dente. Reserve at least 1 cup of the pasta water before draining.

Brown the butter

  • In a large skillet over medium heat, melt the butter. Let it foam and cook until golden brown with a nutty aroma (about 4–5 minutes). Don’t walk away—it goes fast!

Add shallots and garlic

  • Stir in the minced shallot and cook for 2–3 minutes, until softened. Add the garlic and sauté for another 30 seconds until fragrant.

Stir in the miso

  • Lower the heat and whisk in the miso paste. It’ll be thick at first. Add ⅓ cup of reserved pasta water and stir until it melts into a smooth, glossy sauce.

Toss in the pasta

  • Add the drained pasta to the pan and toss until evenly coated in the sauce. Add more pasta water as needed to loosen and gloss things up.

Serve it up

  • Finish with freshly cracked black pepper and any optional toppings you love. Serve immediately and prepare to swoon.
