Ingredients

For the taco cups:

  • 12 street taco-size flour tortillas or cut down regular tortillas
  • Olive oil spray or melted butter
  • 1 cup shredded cheddar or American cheese
  • Sesame seeds optional, for garnish

For the seasoned beef:

  • 1 lb ground beef
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp yellow mustard
  • Salt & pepper to taste

For the homemade special sauce:

  • 1 cup mayonnaise
  • ¼ cup sweet pickle relish
  • 2 tbsp Düsseldorf mustard or yellow mustard
  • 1 tsp white wine vinegar
  • tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • tsp white pepper

For topping:

  • Shredded iceberg lettuce
  • Dill pickles chopped

Instructions

Prep the Taco Cups

  • Preheat your oven to 375°F.
  • Warm tortillas slightly in the microwave to make them flexible.
  • Press each tortilla into a muffin tin to form a cup. Spray or brush with oil or butter.
  • Optional: sprinkle sesame seeds on the rims for that “burger bun” effect.

Make the Beef

  • Brown the ground beef in a skillet over medium heat.
  • Drain excess grease, then stir in onion powder, garlic powder, mustard, salt, and pepper. Set aside.

Mix the Special Sauce

  • Whisk together all sauce ingredients in a bowl. Taste and adjust seasoning if needed.
  • Store in the fridge until ready to use—it just gets better as it sits!

Assemble and Bake

  • Fill each taco cup with a spoonful of seasoned beef and top with shredded cheese.
  • Bake for 10–12 minutes, or until the cheese is melted and tortillas are golden.

Garnish and Serve

  • Let them cool slightly, then top with shredded lettuce, chopped pickles, and a drizzle of your special sauce.
